\u2022 O HACCP (Hazard Analysis and Critical Control Points ou An\u00e1lise de Perigos e Pontos Cr\u00edticos de Controlo)<\/strong> \u00e9 um sistema de auto-controlo, internacionalmente reconhecido, concebido para prevenir a ocorr\u00eancia de potenciais perigos, durante as v\u00e1rias opera\u00e7\u00f5es de manuseamento, armazenagem e transporte dos g\u00e9neros aliment\u00edcios. Esta preven\u00e7\u00e3o \u00e9 assegurada atrav\u00e9s da an\u00e1lise e avalia\u00e7\u00e3o dos v\u00e1rios perigos associados ao produto ou ao processo e da determina\u00e7\u00e3o dos passos necess\u00e1rios para concretizar a preven\u00e7\u00e3o e controlo dos perigos identificados.<\/p>\n

\u00c9 um sistema de implementa\u00e7\u00e3o obrigat\u00f3ria deste 1 de Janeiro de 2006, ap\u00f3s a emiss\u00e3o do Regulamento (CE) n.\u00ba 852\/2004 do Parlamento Europeu e do Conselho a 29 de Abril de 2004, referente \u00e0 higiene dos g\u00e9neros aliment\u00edcios, obrigatoriamente aplic\u00e1vel a todas as empresas que operam nas fases de produ\u00e7\u00e3o, transforma\u00e7\u00e3o e distribui\u00e7\u00e3o de g\u00e9neros aliment\u00edcios, estando apenas exclu\u00eddas as de produ\u00e7\u00e3o prim\u00e1ria.<\/p>\n

\u2022 O sistema HACCP \u00e9 uma importante ferramenta na garantia da seguran\u00e7a alimentar que, atrav\u00e9s da sua flexibilidade, \u00e9 implementado e validado com sucesso em pequenas, m\u00e9dias e grandes empresas.<\/p>\n<\/div>\n
